Vegetarian Roadkill

Always Backroads

I don’t know if these green chiles felt pain when they hit the road, but I certainly was saddened by this carnage.

LOL! The mother of a friend noticed that many sugar beets fall off the trucks transporting them from the fields around here to the sugar factory in the next town. She decided this waste needed to be addressed, so she rescued some from the side of the road and created pickled beets from them. She called them “roadkill pickled beets”, and they were, amazingly enough, not that bad!
